Sweet Potato Brownie Bites

These are so easy & straight up delicious. TBH I was craving chocolate at 9am and just wanted a brownie so I made these gf, refined sugar free, and vegan brownie bites

Prep:

~Bake 1 medium size sweet potato for about 50 minutes at 350 degrees (or until soft)

~soak 1/2 cup of dates in warm water so they blend easier

 

Ingredients:

~1/2 cup medjool dates

~1/2 cup cassava flour 

~3 tbsp melted coconut oil 

~1/4 cup + 2tbsp cocoa powder 

~2 tbsp monk fruit (or sweetener of choice)

~1/4 cup coconut milk

~1 tsp vanilla extract

~1 cup sweet potato puree (1 medium sweet potato, baked, skin removed)

~2 flax eggs (2 tbsp flax meal mixed with 6tbsp water, set aside for 10 minutes)

~1.5 tsp baking powder

~1/8 tsp pink Himalayan salt

 

Instructions:

~Use a food processor or blender and slowly add all the ingredients to the food processor. Add the sweet potato & coconut milk last and make sure to keep scraping the sides so that it all mixes up.

~Evenly add the brownie batter into a muffin pan and add chocolate chips on top (I used Lily’s chocolate chips)

~bake in the oven at 350 degrees for 18-20 minutes
