~~and extra awesome if you make these with repurposed carrot pulp from juicing
Add to a food processor:
~1 cup of pecans (process this until fine first)
~1 cup of medjool dates (soak in water for 5 minutes first)
~1 cup carrot pulp (or shredded carrots)
~1 tsp sweetener of choice (I used Lakanto monk fruit sweetener)
~1 tsp All Spice
~1/2 tsp ground ginger
~1 tsp cinnamon
~2 tsp adaptogen of choice (I used Reishi for some anti stress and calming effects)
For the frosting:
Put in the fridge for a few hours, then enjoy!
