I think this is one of my favorite recipes of all time & it’s so easy too!
My best friend Alyssa came up with it (@theblysslife)
We served the Dahl with quinoa, roasted potatoes, sautéed greens, and cilantro

Ingredients:
~1 cup red lentils
~1 cup or more vegetables of choice (we used shredded carrots)
~3 cups of water
~1/2 can diced tomatoes
~1/2 can reduced fat coconut milk
~4 garlic cloves minced
~1/2 tsp onion powder
~1 tsp mustard powder
~1/2 tsp smoked paprika
~1/2 tsp pink salt
~2 tsp turmeric
~2 tsp curry powder
~1 tsp cumin
~about 7 sprigs of cilantro
Instructions:
~bring all ingredients to a boil besides tomatoes and coconut milk. Bring back to a simmer and add coconut milk and tomatoes. Leave on simmer, stirring occasionally until lentils are fully soft and Dahl has thickened. enjoy!
